Almond flour (the same thing UK recipes call ground almonds) is milled from blanched, skinless almonds to a fine, pale flour — the grind behind smooth macaron shells, moist almond cake and tender frangipane. It's naturally gluten-free, low in carbohydrates and high in protein, which also makes it the staple flour for keto and low-carb baking.
