Borlotti Beans
The Italian kitchen's favourite bean: cream-coloured with red speckles, cooking up soft and creamy with a mild, chestnut-like sweetness. Borlotti are the traditional choice for pasta e fagioli, Tuscan bean stews and warm bean salads with olive oil and sage.

Kitchen notes: soak overnight, then simmer gently until creamy – they hold together well in slow cooking.
