The name of Ceylon comes from the fact that this variety is the true original cinnamon, native to Sri Lanka. In case you didn't know, the former name of Sri Lanka was Ceylon.
This type of cinnamon is more difficult to find and more expensive than the cassia variety. Ceylon cinnamon has a lighter colour, a delicate taste and a more flavourful aroma.
