Teff Flour
Teff is the world's smallest grain and Ethiopia's staple – the flour behind injera, the spongy fermented flatbread. Because the grain is too small to refine, teff flour is always wholegrain: naturally gluten-free, with iron, calcium and fibre intact.
Organic brown teff flour: deeper, maltier flavour – the traditional injera choice, also good in brownies and dark bakes.
Organic white teff flour: milder and lighter, easier to slip into pancakes, muffins and everyday gluten-free baking.
Use 25–50% teff in gluten-free blends for structure and a gentle nutty depth.
