Oat flour has become quite popular in gluten free cooking: and for good reason! It's a healthy substitute for all-purpose flour, and it's easy to make at home.
A lovely short flour with a subtle buttery flavour, this will add a great texture to cookies and bread mixes and can stand in for ground almonds in some of the more expensive ingredients lists.
Team it with another short flour - e.g. white rice - and a small amount of binder such as guar gum or xanthan gum to make an excellent base for tray bakes.
Instructions For Use:
In most cases, oat flour can be substituted for wheat flour in equal ratios. Use it to make delicious biscuits, pancakes, muffins, and cookies. Oat flour also works delightfully in fruit crumbles or crisps due to its crumbly, chewy nature.

Store in a cool dry place, away from direct sunlight, heat and damp.
