Cinnamon Cassia sticks are versatile, not only in sweet dishes but also in tea infusions and a wide range of savoury dishes such as soups, tagines, chillies and baked goods such as muffins, cakes, biscuits, pancakes, and breads.
Cassia is made from the dried inner bark of evergreen trees in Asia. Not to be confused with other types of cinnamon as they are all different, Cassia tends to have a dark brown-red colour with thicker sticks and a rougher texture than Ceylon cinnamon.
Cinnamon is used for a variety of health benefits in alternative medicine. Including colds, digestive problems, painful menstrual periods and most commonly, diabetes. This is due to cinnamon containing chemicals that seem to improve insulin sensitivity.
