What Is Yellow Semolina?
Semolina is a coarse, ground and well-purified wheat middlings of durum wheat. The term semolina is also used to separate the coarse middlings from other versions of wheat, along with other grains, like corn and rice. The deep yellow colour is due to the high concentrations of carotenoids (the same compound that makes carrots orange!)

Semolina is also used as a base for couscous, which is made by mixing roughly two parts semolina with one part durum flour (finely ground semolina). It is also very popular in Italy, where it is often used as a replacement for flour when making pasta.
Although Semolina is most commonly used to make pasta or couscous, it also makes a flavourful, chewy bread.
