This type of flour was originally milled as a comparatively coarse, rustic flour in Northern Italy and used for ciabatta. This distinctive loaf actually acquired its name due to its elongated, broad, and flat shape looking similar to that of a slipper.
This ciabatta flour is a high protein and high carbohydrate white wheat flour that can support the large air bubbles that develop during fermentation, and which characterise this delicious Italian bread.
Although ciabatta is baked with a much stronger flour, it has a more delicate and sweet taste.

This flour was specifically designed to easily create your own homemade loaves of the rustic, classic Italian bread, ciabatta. It is also a good all-round flour for making other high hydration doughs and sourdoughs.
