1 cup non-dairy milk▢1/3 cup canola oil▢1 cup granulated sugar▢2 teaspoons apple cider vinegar▢1 tablespoon vanilla▢2 1/4 cups all purpose flour▢1 tablespoon baking powder▢3/4 teaspoon salt▢3/4 cup chopped walnuts or chocolate chips plus more for sprinkling on top

Ingredients

3 mature bananas (mashed)

sunflower oil 100 ml

plant based milk 200 ml

vinegar 1 tbsp

salt ½ tsp
-
brown sugar 200g

self-raising flour 300 g

baking powder 1 tsp
-
vanilla syrup 1 tbsp
-
nibbed almonds or chopped walnuts
Directions
In a large bowl, add mashed bananas and all the wet ingredients. Mix well.
Gradually add sugar and mix until it dissolves.
Gradually add flours, baking powder and a handful of nuts of your choice.
Preheat oven to 200 degrees C.
Prepare the muffin tin - place paper cups into it.
Fill up the paper cups with dough. Bake for 15-20 min until ready.
