Healthy and nutritious summer salad with quinoa, pumpkin seeds, sunflower seeds and flaxseed. Perfect for lunch!

Ingredients
colourful quinoa mix 200 g (cooked and rinsed)
pumpkin seeds 1 tbsp
sunflower seeds 1 tbsp
flaxseed 1 tbsp
cherry tomatoes 200 g
1 cucumber
1 onion
1 lemon (juiced)
extra virgin olive oil 2 tbs
black pepper for taste
salt for taste
Fresh coriander for topping.
Directions
Finely chop the onion, cucumber and tomatoes.
Place quinoa, seeds and the veggies in a large bowl.
Add salt, pepper, olive oil and lemon juice. Mix well.
Serve with freshly chopped coriander.
