Roasted asparagus with lemon

Ingredients

400 g fresh green asparagus

extra virgin olive oil

1 lemon
-
a pinch of salt

black pepper (freshly ground) for taste

plant based parmesan alternative (optional)

2 tsp of thyme
Directions
Preheat the oven 180C.
Preparing the pan - use parchment paper (for easy clean up) and grease it a bit with. Preparing the asparagus - cut off the woody ends (1-2 cm)
Arrange the asparagus on the baking pan. Drizzle with olive oil, sprinkle with sea salt, freshly ground black pepper and thyme.
Cut the half of the lemon into thin slices and lay them on top of asparagus. Squeeze the juice on top of it. Top with grated dairy-free parmesan (optional).
Place the pan in the oven and bake for 15 min.
