Ingredients

8 star anise pods

1 tsp. red chili flakes

2 cups dark muscovado sugar

2 cups water

1 tsp. citric acid

1 tsp. salt

2 lemons

¾ oz. chilied star anise syrup

2 dashes orange bitters
-
2-4 oz club soda

For the Mocktail
Directions
Chillied Star Anise Syrup
In a medium saucepan, toast the chili flakes and star anise over medium-high heat
Add the water to the sauce pan and simmer for 5 minutes keeping the height at medium-high
Once the spices and water have fully merged, turn off the heat
Add the sugar & salt
Whisk until the sugar & salt have dissolved
Using a zester, add the zest of 2 lemons
Take off the heat
Let cool until lukewarm
Add the contents to a blender & blitz on high
Strain the syrup through a paper filter
Add in the citric acid
Whisk until the citric acid has dissolved
Mocktail
Add all ingredients into a shaker except for the club soda
Shake and strain over fresh ice
Top with soda
Garnish with a wheel of lemon and sip away!
