Cassia sticks are single, sturdy curls of dried inner bark — dark brown-red, rougher and far more robust than the papery quills of Ceylon. The flavour is warm, sweet and pungent, built to survive long simmering, which makes cassia the go-to stick for big-flavoured pots and winter drinks. Cassia is naturally higher in coumarin than Ceylon, so heavy daily users often prefer the Ceylon variety. Certified organic.
