Cannellini Beanie Veggie Patty

Ingredients
- 1 yellow onion, peeled and minced
- 3 cloves garlic, peeled and minced

1/2 Cup finely diced broccoli florets

3 tbsp Tahini or cashew butter

2 Cups cannellini beans, drained well

1 1/2 Cups uncooked gluten free oats

1 tsp kala namak black salt - (or use sea salt)
Directions
PREP WARNING- Dried Cannellini beans must be soaked for at least 5 hours before using for recipe!
Preheat oven to 180 °C
Line a baking sheet with parchment
Combine onion, garlic, and broccoli in a large frying pan over medium heat,
Sauté in a bit of water until soft and onions are translucent.
Remove from heat, stir in tahini / cashew butter.
Drain and add beans to a large mixing bowl
Mash using a fork or potato masher.
Add frying pan mixture, oats and kala namak, stirring to combine completely.
- Using hands, form mixture into patties - mine were about 4 inches across, 3/4 inch thick?
Place patties on prepared baking sheet, bake at 180 °C for 25 minutes.
Once partially cooled immediately serve with favourite toppings and enjoy!
