Chickpea salad with red pepper and green chilli

Try this healthy and nutritious chickpea salad at home!

Ingredients

500 g dried chickpeas

1 tsp ground cumin

2 tbsp olive oil

1 fresh green chilli

1 lemon or lime juiced

1 onion (chopped)

1 tsp ground paprika

salt (for taste)

1 red pepper (chopped)
Directions
Place the dried chickpeas in a large bowl and cover completely with cold water (there should be a few cm of water over the chickpeas).
Allow to soak overnight, or about 12 hours.
Drain the water and rinse the chickpeas a couple of times with fresh water.
Place them in a medium size pot, add fresh water again, garlic clove, bay leaf and some salt and cook for 90 minutes.
Drain the chickpeas and place in a medium size bowl to cool down.
Add chopped onion, chopped bell pepper, green chilli, olive oil, lemon juice, salt, cumin and paprika. Mix all the ingredients!
Serve with some chopped parsley or fresh coriander.
