Easy to make veggie lunch the entire family will love! Dairy-free and egg-free, and simply delicious. These courgette fritters are made with spices and flaxseed.

                      Ingredients
- 
1 large courgette 
- 
ground flaxseed 4 tsp (for the flax egg) 
- 
sea salt for taste 
- 
black pepper for taste 
- 
ground garlic 2 tsp 
- 
ground coriander 2 tsp 
- 
paprika ½ tsp 
- 
ground cumin 1 tsp 
- 
4 tbsp of chickpea flour 
- 
2 tbsp of corn flour 
- 
sunflower oil for frying 
Directions
- In a large bowl, grate the entire courgette. Set aside for 15 min. 
- Prepare the flax egg: mix 4 tsp of ground flaxseed with tbsp of water. Adding flaxseed will help to combine all the ingredients. 
- Remove the juices from the courgette. 
- Add chickpea flour, corn flour and the spices. Mix. 
- Add the flax egg and mix with the rest of the ingredients. 
- Heat up the pan. Add some sunflower oil. 
- Form round-shaped patties from your courgette ‘dough’. Fry for a few minutes on each side.
