Spanish Gazpacho soup with a twist

Easy and delicious Spanish soup with the addition of oats. Served with sourdough toast, it will make a light but fulfilling lunch.
 
                      Ingredients
- 
4 tomatoes chopped 
- 
1 cucumber chopped 
- 
1 onion chopped 
- 
1 red pepper chopped 
- 
1 green pepper chopped 
- 
2 garlic cloves 
- 
1 glass of cold water 
- 
50 ml of olive oil 
- 
oats 1 tbs per portion 
- 
1 glass of tomato juice 
- 
salt ½ tsp 
- 
pepper ½ tsp 
- 
cider vinegar 2 tbsp 
Directions
- In a pot, blend all the ingredients until smooth. 
- Add salt and pepper to taste. Mix. 
- Add a spoon of oats on the bottom of the bowl before pouring the soup. 
- Decorate with some chopped peppers and cucumbers, and a dash of extra virgin olive oil.
