Spanish Gazpacho soup with a twist

Easy and delicious Spanish soup with the addition of oats. Served with sourdough toast, it will make a light but fulfilling lunch.
Ingredients

4 tomatoes chopped

1 cucumber chopped

1 onion chopped

1 red pepper chopped

1 green pepper chopped

2 garlic cloves
-
1 glass of cold water

50 ml of olive oil

oats 1 tbs per portion

1 glass of tomato juice

salt ½ tsp
-
pepper ½ tsp
-
cider vinegar 2 tbsp
Directions
In a pot, blend all the ingredients until smooth.
Add salt and pepper to taste. Mix.
Add a spoon of oats on the bottom of the bowl before pouring the soup.
Decorate with some chopped peppers and cucumbers, and a dash of extra virgin olive oil.
Serve cold with a few toasted bread slices.
