This easy and quick cous cous salad will make an excellent healthy lunch for the entire family.

Ingredients

cous cous 300 g
-
cherry tomatoes 1 package

cucumber 1
-
onion 1 chopped
-
extra virgin olive oil
-
lemon 1 juiced

Celtic salt for taste

cracked black pepper for taste

fresh or dried basil

fresh or dried peppermint

fresh or dried parsley
Directions
In a large bowl, add dry cous cous. Pour boiling water over it, leave 1 cm of water on top of cous cous. Add salt, and some olive oil, mix and leave to sit for 10 minutes.
When ready (and absorbed all the water), stir it with a spoon to make it fluffy. Add chopped onions, tomatoes cut in halves and cucumber cut in cubes.
Add fresh or dried herbs, lemon juice, extra virgin olive oil, salt and pepper for taste. Mix altogether.
