3 ripe bananas

all-purpose flour 350 g

2 carrots

true Ceylon cinnamon 3 tsp

walnuts (broken or chopped

coconut sugar 100 g

sunflower oil 80 ml

baking powder 2,5 tsp

baking soda 1 tsp

Celtic salt
-
plant based milk 150 ml

ground ginger 1 tsp
Directions
Preheat oven 180C.
Grease the loaf pan.
Mash the bananas and grate the carrots separately. The bananas should be ripe and soft.
In a large bowl, add flour, baking powder, baking soda, spices, salt, sugar and mix.
Add oil, mashed banana, plant based milk and mix.
Stir in the grated carrots and walnuts and mix to combine.
Bake in the loaf pan for about 60 minutes.
