Summer grilled vegetables salad, served with tomato paste mixed with chilli flakes, oregano, olive oil and balsamic vinegar.

Ingredients

1 courgette
-
1 red bell pepper

1 red onion

1 white onion

1 large tomato

a few cherry tomatoes

fresh basil

1 tsp dry organic oregano

½ tsp chilli flakes

½ tsp sea salt

3 tbsp extra virgin olive oil

3 tbsp balsamic vinegar

2 tbsp organic tomato paste
Directions
Cut the veggies: courgette and pepper in long slices, onions and large tomato in slices.
Grill the veggies until ready (approx. 5-10 min each side). You can also roast the veggies in the oven.
Prepare the sauce:
In a medium size bowl, add extra virgin olive oil, balsamic vinegar, tomato paste, chilli flakes, salt, oregano. Mix all the ingredients.
Add grilled veggies, mix with the sauce.
Serve on two plates (for 2 people). Add cherry tomatoes cut in halves, fresh basil leaves. You can drizzle the salad with some extra olive oil and balsamic vinegar.
Serve with basmati rice, a slice of freshly baked sourdough bread or a portion of protein packed boiled chickpea.
