Ingredients

lentils 500g
-
1 large onion (chopped)
-
2 cloves garlic
-
1 tsp garlic powder
-
bay leaves whole 2
-
2 fresh carrots (chopped)
-
water 2 litres
-
sea salt ½tsp
-
black pepper for taste
-
1 green pepper (chopped)
-
1 large potato (chopped)
-
organic ground cumin 1 tsp
-
organic paprika 1 tsp
-
extra virgin olive oil 3 tbsp (to simmer the veg)

boiled water if needed

organic tomato pulp 4 tbsp
Directions
In a medium size pot cook lentils in water with bay leaves, garlic cloves and salt for 15 min.
Add chopped carrots and chopped potatoes. Cook more 15 min.
On a pan add olive oil, onion and green pepper. Add tomato pulp. Simmer for 15 minutes until soft.
Incorporate the pepper and onion into cooked lentils with veg. Add spices (cumin and paprika) and cook for more 5-10 min.
Add black pepper and salt for taste.
