This comforting soup is made with dried mushrooms, onions, and a bit of dairy-free cream. You can top it with some fried fresh mushrooms and freshly chopped parsley. Delicious!

Ingredients

100 g dried mushrooms

1 large onion (chopped)

1,5 litre of vegetable stock

3 tbsp olive oil

0,5 l of boiling water (for the mushrooms)

4 tbsp of soy cream
Directions
In a small bowl, cover the dried mushrooms with water. Set aside for 15 min.
In a medium size pot, add olive oil and chopped onion. Saute fr a few minutes.
Add the mushrooms with water. Cook for 5 min.
Add the stock and cook for 25 minutes.
When ready, blend all the ingredients. Add soy cream, salt and pepper for taste and mix.
Serve topped with chopped parsley. You can also chop a few fresh mushrooms and fry them for the soup garnishing.
