Ingredients

quinoa (cooked) 2 cups

tinned kidney beans (drained) 1 tin

tinned corn (drained) 1 tin

chives (chopped)

fresh coriander (chopped)

mustard 2 tbs

cayenne pepper 1 pinch

extra virgin olive oil 2 tbsp

balsamic vinegar 2 tbsp

coriander powder 1 tsp

sea salt ½ tsp (for taste)
Directions
Preparing the quinoa: cook it in water with a bit of salt for about 20 minutes. Set aside to cool down.
Add all the ingredients into a large bowl. Add spices, olive oil and vinegar.
Mix all the ingredients together.
Serve topped with freshly chopped coriander.
