Rustle up these lentil fritters in a flash! They're healthy, hearty and packed full of plant protein.

Ingredients

150g Red Lentils

30g Chickpea Flour

1 Onion, chopped

2 Large cloves of garlic, chopped

Vegetables of your choice - carrot, pepper, courgette, tomato

1 tsp Sesame seeds

1 tsp Cumin seeds

1 tsp Turmeric
-
½ tsp Sea salt
-
½ tbsp chopped fresh ginger

Handful of chopped coriander

2 tbsp Oil
Directions
Rinse and clean the red lentils in a sieve under running water.
Place lentils in a pot or pan with water and a pinch of salt. Bring to the boil and simmer for around 15 minutes, or until soft - there should be no water left.
In a separate pan, cook the onion, garlic and chopped/grated vegetables of your choice and fry over a medium heat for a few minutes.
Once the lentils and veggies have been cooked, put them all in a food processor along with the chickpea flour, sesame seeds, spices, ginger and coriander. Pulse a few times to make sure the mixture is properly combined.
The mixture should now be mouldable - if not add some more flour. Shape into approx. 8 patties and fry them with a little oil. Fry each side until golden brown and crispy.
Add a dip and/or side salad and enjoy!
