Sunflower seeds pesto

This green pesto is made with organic sunflower seeds - a great source of vitamin E and magnesium.

Ingredients

organic sunflower seeds 100g

fresh basil 50g

2-3 cloves garlic

nutritional yeast 2 tbsp (for a cheesy, nutty flavour)

extra virgin olive oil 100ml

1-2 tbsp lemon juice

Salt for taste

Black pepper for taste
Directions
Toasting sunflower seeds: In a dry pan for a couple of minutes, stir frequently so they don’t burn.
Blending: Add the toasted sunflower seeds, basil, garlic, and nutritional yeast to a food processor. Pulse until everything is finely chopped and well mixed.
With the processor running, slowly drizzle in the olive oil until the pesto reaches your desired consistency. Add more oil or a little water if you want it thinner.
Taste your pesto and add salt, pepper, and lemon juice to your liking.
