The best homemade vegan burger patty recipe with brown rice and protein loaded TVP mince. Hearty, Easy, 'Meaty'

Ingredients

2 Cups cooked Brown Rice
-
2 Cups TVP Mince or Soy chunks
-
4-5 tbsp Tapioca Flour
-
2 tsp Onion powder
-
1 tsp Garlic powder
-
1/2 tsp Chili powder or to taste

3 Grated garlic cloves
-
1 tbsp smoked paprika or 1 tsp liquid smoke

1 tbsp Nutritional yeast
-
2 tbsp Soy sauce
-
2 tbsp Grated roasted beets
-
1.5 tsp Sea salt (smoked is ideal but optional)
- black pepper to taste

1/3 Cup Bread crumbs (Use more as needed) preferably whole wheat or panko

OPTIONAL 5 tbsp Vital Wheat Gluten (add in if for the patties to be firm and hold together the best on a grill)

2 Cups hot water

2 tbsp Olive Oil
Directions
In a mixing bowl combine the Soy Chunks or TVP mince with the hot water
Let soak for 20 minutes or until most of the liquid is absorbed.
Drain and wring out any excess water. (Fluff with a fork if using TVP)
Add the cooked brown rice and TVP a food processor bowl along with the soy sauce, smoked paprika, beets and all the spices including the tapioca.
Using the pulse button gradually mix everything until combined.
*DO NOT OVER PROCESS*
make sure to maintain a nice texture, a few quick of pulses should be enough.
Transfer mixture to a bowl
Fold in the panko bread crumbs.
OPTIONAL- Add in the4 Vital Wheat Gluten for a more firm burger patty.
lightly oil your hands and form the mixture into patties.
It should yield about 6 to 8 depending on how their size.
Sear each burger in a hot cast iron skillet for a couple of minutes on each side until golden brown. (Make sure to lightly oil your pan aswell to avoid any sticking)
Or just throw them on a grill if making the Vital Wheat Gluten variation
Serve with your favourite toppings and bun, enjoy!
Recipe Note
-If using TVP Chunks instead make sure to give them a buzz in the food processor after soaking, so that the texture is similar to that of TVP mince or the rice grains. We want a nice texture not a powder!
- If an extra firm burger patty that holds tighter together is desired, add in the vital wheat gluten or increase the bread crumbs amount until firm to your liking.
