Ingredients

350g Self-raising Flour

3 tbsp. Sugar

1 tsp. Baking Powder

100g Vegan Spread
-
150ml Soy Milk (or any plant milk alternative)

75g Raisins

1 tbsp. Vanilla Extract

1/4 tsp. Salt

1 tbsp Maple Syrup (for glaze)

1 tbsp. Soy Milk (for glaze)

Jam and Vegan Cream alternative, to serve
Directions
Preheat oven to 220c / Gas mark 7 and line a baking tray.
In a large bowl combine the flour, sugar, salt and baking powder.
Rub vegan butter into the flour mix, using a fork or your fingertips until it resembles breadcrumbs. Alternatively use a food processor.
Gradually add the soy milk, vanilla extract, and raisins, stirring to create a loose, sticky dough.
Use flour to lightly dust your surface and gently roll out the scone dough until approx. 1 inch thick.
Take a 3 inch cutter dipped in a bit of flour to cut out circles in the dough and add them to the baking tray.
Combine the soy milk with maple syrup and brush the mixture on the tops of the scones for a nice golden brown top once baked.
Bake in the over for 10-12 minutes until the tops of the scones are golden brown.
Allow to cool for 10 minutes and enjoy the scones warm or cold. Serve with jam and vegan cream - scrumptious!
