A British classic, you can't go wrong with these divine lemon shortbread biscuits. Made gluten free, just for you!

Ingredients

100 g Almond Flour

30g Coconut Sugar

3 tbsps. Butter or Dairy free alternative

1 tbsp. Lemon Peel/Zest

1/4 tsp. Salt (optional)

1/2 tsp. Vanilla Extract
Directions
Line a baking tray and pre heat the oven to 180C/Gas mark 4.
In a large bowl, mix soft butter with the lemon zest and vanilla extract.
Add in the sugar, then flour and salt to the mixture. Stir well until mixture is smooth and well combined.
Roll dough into 10 evenly sized balls, then place them on the baking tray. Flatten them halfway down. Optional - sprinkle some sugar over the top before baking.
Bake the shortbread in the oven for 10-12 minutes, until they start to turn light golden brown on top.
Remove from oven and allow to cool before eating. Enjoy!
