Ingredients

canned white beans (drained)

red pepper chopped

fresh parsley chopped

green pepper chopped

apple cider vinegar
-
red onion (chopped)

cumin (optional)

coriander (optional)

extra virgin olive oil
Directions
Place all the veggies in a large bowl.
Add a olive oil, vinegar, salt, pepper, and spices.
Mix all the ingredients.
Add chopped parsley and mix again.
Serve in two bowls (meal for 2 people) or share with others as side dish.
