Who doesn't LOVE cookies?! Try these vegan friendly and gluten free cookies. But be warned, they are extremely moreish.

Ingredients

250g Almond Flour

1/2 tsp. Baking Soda

125g Butter or Vegan butter

3 tbsps. Maple Syrup

1/2 tsp. Salt

1 tsp. Vanilla Extract

100g Cacao Nibs

100g Chopped Nuts
Directions
Line a baking tray and pre heat the oven to 180C/Gas mark 4.
Take a large mixing bowl and combine almond flour, salt and baking soda, mixing well.
In a separate bowl add melted butter, maple syrup and vanilla extract, mix together.
Combine the wet and dry ingredients, make sure to mix thoroughly until no trace of flour remains.
Using a rubber spatula, fold the cacao nibs and chopped nuts into the mixture.
Form 10 small rounded balls with the dough and place them on the baking tray, whilst flattening slightly.
Bake in the oven for 10-12 minutes, or until golden brown around the edges.
Remove from oven and allow to cool before eating.
