Chickpea, Feta & Avocado Salad
This simple chickpea salad makes a perfect side dish to most meals or as a tasty lunch or snack. Either way - CHICK it out!
Soak chickpeas in water overnight. Drain and rinse.
Put in pan and cook for approx. 25 min. Cook for longer if you want them softer.
In a small bowl, combine olive oil, lemon, garlic and salt and pepper. Whisk or mix to make the dressing.
In a larger bowl mix the cooked chickpeas, diced avocado, feta and coriander. Plus any additional ingredients.
Add dressing to taste, toss to coat - Voila!
