Cashew beetroot spread with pine nuts

Healthy and delicious spread made with beetroot and cashews. Great for toasts, crackers, oatcakes and fresh veggies.
Ingredients

1 jar of pickled beetroot (you can also choose canned)

200 g of raw cashews

½ tsp sea salt

½ tsp black pepper

3 tbsp olive oil

1 tbsp lemon juice
-
4 tbsp nutritional yeast

1 tsp ground cumin
Directions
In a medium size bowl place all the ingredients and spices.
Blend for a minute until smooth.
Serve topped with pine nuts, a drizzle of olive oil and some freshly ground pepper.
