Soft and fluffy cinnamon muffins - ideal for Christmas.

Ingredients

Ceylon cinnamon powder 3-4 tsp

wholemeal flour 300 g

baking powder 2 tsp
-
flaxseed for egg replacer 4 tsp + 10 tbsp water
-
plant-based milk 200 ml
-
sunflower oil 200 ml
-
brown sugar 150 g
-
pinch of nutmeg
-
vanilla extract syrup 2 tbsp
-
salt ½ tsp
-
applesauce 2 tbsp
Directions
Preheat the oven to 180 C.
Spray the muffin tin well with cooking oil spray.
In a large bowl, mix together flour, baking powder, salt and spices.
In another bowl mix together sunflower oil, applesauce, flaxseed egg, sugar and milk.
Pour the wet mixture into the dry mixture. Whisk together so all the ingredients combine well (don’t overmix).
Pour the batter into the wholes in the muffin tin.
Bake in the oven for about 25 minutes. Insert a toothpick to check if the batter is cooked (the toothpick will come out clean).
Let the muffins cool down in the tin.
