Ingredients

self-raising flour 150 g

brown sugar 140 g

plant-based butter 150 g

plant-based milk 60 ml

vanilla extract 1 tbsp

1 tsp ground ginger

1 tsp cinnamon

1 tsp cardamom

3 tbsp broken walnuts

powder sugar for topping (optional)
Directions
Heat the oven to 180 C.
Prepare a 12-hole muffin tin with cupcake paper cases.
Beat the butter and sugar together for a fluffy mixture. Add the flaxseed and vanilla.
Add the flour and spices, milk, walnuts and mix until you have a smooth batter.
Use a tablespoon to pour the batter into the cupcake cases (two-thirds full).
Bake for 15 mins. The cupcakes should be firm and golden brown.
