Ingredients

giant couscous 250g
2 medium size tomatoes
a bunch of fresh mint
a bunch of fresh parsley
onion
½ tsp salt
½ ground coriander
black pepper for taste

extra virgin olive oil 3 tbsp
lemon juice 3 tbsp
Directions
In a medium size bowl place the cous cous and salt, add boiling water (1 cm above the cous cous) Leave it for 5 min.
Chop the the onion, tomatoes and herbs.
In a large bowl, combine all the chopped ingredients, add salt and pepper for taste.
Add cous cous, oilve oil, lemon juice and mix with tomatoes and herbs.
Served topped with some sunflower and pumpkin seeds!
