small courgette thinly sliced

dried organic thyme

green peas frozen 200 g or canned (1 can)

grated parmesan (optional)

basil (fresh, optional)

Directions
Heat up the pan. Add some oil and thinly chopped courgette, chives, frozen peas. Saute for 5 min.
In the meantime, prepare the chickpea eggs. In a small bowl, add 150g chickpea flour. Add 200 ml milk, thyme, black salt and whisk until well combined, smooth and fluffy.
Pour the chickpea mixture over the veggies in the pan.
Fry on both sides for a few minutes until the ‘eggs’ are cooked.
Top with fresh basil and grated parmesan.
