This spiced, chickpea tomato stew is hearty, packed with plant-based protein and perfect to pair with quinoa, bulgur or couscous. The entire meal is ready in 30 min!
Ingredients

2 cans of chickpea (drained)

1 can of tomatoes

3 cloves of garlic
-
chilli flakes 1 tsp

extra virgin olive oil 3 tbsp plus more for drizzling

sea salt 1 tsp

dried organic oregano

1 onion
Directions
On a hot pan, add some oil and chilli flakes. Fry for 2-3 minutes.
Add chopped onion. Saute for a few minutes. Add chopped garlic. Mix.
Add tomatoes. Saute for 10 minutes.
Add chickpeas (drained), salt and cook on a small heat always mixing.
Add some paprika and more chilli flakes (if you like it spicy.)
Add some dried oregano. Drizzle with olive oil.
