Pistachio coconut lemon energy bites

These super tasty snack balls made with pistachios, coconut and lemon will give you an extra kick of energy!

Ingredients

pistachios 125g

desiccated coconut 75g

Raw Gorilla raw organic virgin coconut oil 3 tbsp
- Zest of half lemon

Juice of 1 small lemon (around 3 tbsp)

agave syrup 2 tbsp

chia seeds 1 tbsp
Directions
Add all the ingredients to a food processor and blend for a few minutes until a dough is formed.
If the dough is too dry you can add a little more lemon juice. If it’s too wet add some more desiccated coconut.
Divide the mix into 12 pieces. Using your palms roll each portion into a bite size ball.
