This easy quinoa salad with fresh tomatoes and cucumbers will male a perfect lunch meal on a summer day.
Ingredients

Organic quinoa tri-colour (2 cups - cooked)

2 medium size tomatoes
-
1 large cucumber
-
1 small onion
-
fresh parsley - chopped
-
sea salt (for taste)

organic cayenne pepper (for taste)

extra virgin olive oil 3 tbsp

balsamic vinegar 2 tbsp
Directions
Prepare 2 cups of Quinoa grain tri-colour - cook it in water with a bit of salt. Set aside to cool down.
Chop the tomatoes, onion and cucumber into small pieces.
Add all the ingredients into a large bowl. Add cayenne pepper, salt, olive oil, balsamic vinegar, freshly chopped parsley and mix.
Enjoy for lunch or dinner as a healthy light meal!
