Ingredients

3 Cups Pumpkin Seeds Raw

4 Tbsp Salt

1 Tbsp Olive Oil

6 Cups of water
Directions
Preheat the oven to 200°C Fan.
Scoop out the pumpkins guts.
Place in a colander and run under water to rinse and separate the seeds from the rest of the pumpkin guts.
Measure out pumpkin seeds per half cup, add into a large pot.
Add 2 cups of water and 1 tablespoon of salt to the pot for every half cup of pumpkin seeds.
Bring water to a boil, let simmer for 10 minutes.
Remove seeds from heat and use a sieve to drain the water.
In a large bowl add the boiled pumpkin seeds, olive oil and salt. Mix to coat all pumpkin seeds thoroughly.
Spread out seeds thinly over a baking tray
Bake until seeds begin to brown 5-20 minutes.
Depending on seed size and heat from your oven your cooking time may vary.
Keep an eye on the pumpkin seeds so they don't become over cooked.
Once nicely browned, remove pan from the oven and let cool completely before eating.
