An incredibly creamy sauce coats the pasta with all the smoky, chewy, salty and crispy bites of sun dried tomato or your favourite meat alternative. The perfect weeknight meal, made out of all the ingredients you probably already have lying around in your pantry.

Ingredients

400g of Spaghetti (or your choice pasta)

½ cup sliced sun dried tomatoes (the dry kind, not in oil kind)

¼ teaspoon liquid smoke

1 tablespoon olive oil

1 yellow onion

3 cloves garlic, crushed

¼ cup of flour (can make this gluten free if necessary)

1 tablespoon of nutritional yeast

¾ teaspoon of black himalayan salt (Kala Namak), or sub with regular salt

⅓ teaspoon black pepper

2 ½ cups of preferred plant based milk

1 tablespoon of soy sauce
Directions
Bring a large pot of water to a boil and cook the pasta according to package instructions.
Mix together the sun-dried tomatoes, soy sauce, and liquid smoke in a bowl set aside to marinate.
Heat the olive oil in a large pan over medium-high heat.
When hot add the onions and sauté until the onions turn translucent
Add the garlic
Cook until onions begin to brown (about 5 minutes).
Sprinkle over the flour and stir to coat the onions, let cook for about a minute.
Mix in all remaining ingredients.
Cook the sauce for about 5 minutes until thickened, whisking as needed.
Finally, add the cooked & drained pasta and the marinated sun-dried tomatoes to the sauce. Toss well to combine. Serve hot and enjoy!
Recipe Note
*If the sauce gets too thick, add a splash of plant-based milk.
*If the sauce is too thin, simply cook it a little longer.
