Ingredients

6 slices old ciabatta bread, sliced about ¾-inch thick*

1 cup Almond Milk (or any dairy alternative of your preference)

1 teaspoon vanilla extract

1 tablespoon maple syrup, plus more for serving

1 teaspoon ground flaxseeds

2 tablespoons millet flour (or spelt or whole wheat)

1 tablespoon nutritional yeast

1 teaspoon cinnamon

¼ teaspoon freshly ground nutmeg

tiny pinch of salt

½ tablespoon coconut oil, for the pan

Fresh Fruit

Powdered sugar

Directions
In a small bowl, add flour, nutritional yeast, cinnamon, nutmeg and salt, mix until well combined.
In another bowl whisk together the almond milk and maple syrup
Slowly add the wet ingredients in with the dry
Place the bread in a shallow dish (with sides).
Pour the mixture over the bread, then lift or flip the bread over to make sure both sides are evenly coated with mixture.
Heat a drizzle of coconut oil in a large, non stick skillet over medium heat.
When the pan is hot enough, add the bread slices, cooking them each for a few minutes per side, until they become a golden brown.
Serve with powdered sugar, maple syrup, fresh fruit, our your favourite vegan chocolate.
Recipe Note
It is VERY important that you use strong, sturdy slices of bread. Do not use any weak sandwich bread as it is not strong enough and your french toast will come out soggy.
