Healthy and tasty salad with spinach, winter fruits like orange, grapefruit and pomegranate, pecan nuts and blue cheese, dressed with a bit of olive oil and balsamic vinegar. It will make a great option for lunch or lighter dinner.

baby spinach leaves

2 slices of orange

2 slices of pink grapefruit

a handful of pomegranate

blue cheese of your choice 30g

a handful of pecans

extra virgin olive oil

balsamic vinegar

sea salt for taste

freshly cracked black pepper

agave or honey 1 tbsp

orange peel (grated)
Directions
On a large plate, make a bed of spinach leaves.
Top with with slices of orange and grapefruit.
Top it with a handful of pomegranate and pecans.
Top it with crumbles of blue cheese.
Top it with a grated orange peel.
Add a pinch of salt and freshly cracked black pepper.
Drizzle with agave or honey, olive oil and vinegar. Enjoy with a slice of toasted whole grain bread.
