Ingredients

400 g dried organic mung beans

1 medium onion, finely diced

1 celery stalk, finely diced

½ leek, sliced.

3 garlic cloves, minced

1 tablespoon dried oregano

80ml olive oil
-
1.5l water or vegetable stock
-
Juice of 2 lemons

1.5 tsp salt

¼ tsp black pepper

Handful of fresh parsley, chopped
Directions
Rinse the mung beans thoroughly. Place them in a bowl, cover with cold water, and soak for about 2 hours.
Heat the olive oil in a large pot over medium heat. Add the onion, celery, leek and garlic. Sauté for about 5–7 minutes until softened and fragrant.
Stir in the oregano and cook for another minute.
Drain the soaked mung beans and add them to the pot along with the water or vegetable stock.
Bring the soup to a boil, then reduce the heat to medium-low. Cover and simmer for 30–40 minutes, or until the beans are tender.
Stir in the salt, pepper, lemon juice, and fresh parsley. Taste and adjust seasoning if needed. Serve warm with crusty bread and a drizzle of o
