Ingredients
-
150g Dried Peach Halves
-
100g Baked Peanuts No Salt
-
40g Organic Coconut Desiccated, plus extra for rolling
-
1 tbsp RAWGORILLA Raw Organic Virgin Coconut Oil
-
Pinch of salt
-
30g Organic Cacao Liquor Chunks
-
1 tsp RAWGORILLA Raw Organic Virgin Coconut Oil, for the drizzle
Directions
Put the dried peaches in a bowl, cover with just-boiled water and leave for 10 minutes to soften. Drain well and pat dry.
Blitz the peanuts in a food processor until finely chopped.
Add the peaches, desiccated coconut, 1 tbsp coconut oil and the salt, and blitz until the mixture sticks together when pressed.
Roll into 14 small balls, then roll each one in a little extra desiccated coconut. Place on a tray lined with baking paper.
Melt the cacao chunks with 1 tsp coconut oil in a heatproof bowl over a pan of barely simmering water. Drizzle over the bites.
Chill for 30 minutes until set. Keep in the fridge in an airtight container.
