Ingredients
- 150 g pitted dates
- 4 tbsp hot water (to soften dates)
- 2 tbsp tahini
- 8 tbsp toasted unsweetened coconut slices
- 2 tbsp coconut oil
- 2 tbsp chia seeds
- ½ tsp vanilla extract
- ¼ – ½ tsp sea salt
- 4 tbsp roasted almonds, roughly chopped
- Flaky sea salt, for topping
Directions
Soak the 150 g dates in 4 tbsp hot water until soft.
Blend into a smooth paste (add a little soaking water if needed).
Add tahini, coconut oil, salt, and vanilla. Blend again.
Fold in coconut slices, roasted almonds, and chia seeds.
Press firmly into a lined tray or loaf tin.Sprinkle with flaky sea salt.
Refrigerate until set (about 1 hour), then slice.
