- • 150g plain flour
- • ½ tsp baking powder
- • ½ tsp cinnamon
- • Pinch of salt
- • 60 ml melted coconut oil
- • 100g coconut sugar
- • 2 tbsp honey or maple syrup
- • 1 large egg
- • 1 tsp vanilla extract
- • 80–100 g broken Brazil nuts
- • 40–50 g dark chocolate chunks (70% cocoa)
Directions
- 1. Preheat the oven to 175°C (350°F). Line an 8-inch (20 cm) square tin with parchment paper.
- 2. In a bowl, whisk together the flour, baking powder, cinnamon, and salt.
- 3. In another bowl, whisk the oil, coconut sugar, and honey or maple syrup until smooth. Add the egg and vanilla and whisk again.
- 4. Stir the wet mixture into the dry ingredients until just combined. Fold in the Brazil nuts and chocolate (if using).
- 5. Spread the mixture evenly in the tin and bake for around 15 minutes, until golden and a skewer comes out with a few moist crumbs.
- 6. Let cool fully before cutting into squares.
