Chickpea Flour (Gram Flour)
Finely milled from chickpeas – known as gram flour or besan in Indian cooking – this naturally gluten-free flour is one of the most useful in the free-from kitchen, with a savoury depth and strong binding power.
Options: certified organic and everyday chickpea flour.
What to make: pakoras and onion bhajis, Mediterranean socca and Italian farinata flatbreads, vegan omelettes and frittatas, or use it to bind veggie burgers.
Nutrition: notably higher in protein and fibre than wheat flour.
