Bulgur Wheat
Bulgur is cracked wheat that's been parboiled and dried – which means it needs only a brief simmer or even just a soak in hot water before it's ready. Nutty, light and quick, it's the traditional grain of tabbouleh and Middle Eastern pilafs.
Options: certified organic and everyday bulgur wheat.
Kitchen notes: ready in about 15 minutes – fluff with a fork, dress with lemon, olive oil and plenty of herbs for tabbouleh, or use as a faster stand-in for rice.
Nutrition: a wholegrain with more fibre than white rice.
