Arborio Rice
The risotto rice: short Italian grains so rich in surface starch that patient stirring turns them into a creamy sauce while the centre keeps a gentle bite.
Options: certified organic and everyday arborio, in standard packs and 1.5kg Stock & Prep value bags.
Kitchen notes: warm stock added a ladle at a time, constant stirring, finished with butter (or olive oil) off the heat – about 18–20 minutes. Don't rinse it; the starch is the point.
Beyond risotto: arborio also makes excellent rice pudding and arancini from the leftovers.
